Vegetarian RecipesThough I personally am not a complete vegetarian, we as a family eat many meals that feature exclusively vegetarian recipes (my 9 year old son is a vegetarian). In my opinion, a healthy vegetarian diet is one that includes lots of fruits, veggies, beans, properly prepared nuts and seeds, and whole grains, as well as grass-fed raw dairy, fresh free-range eggs, and healthy fats. That being said, being a vegetarian and eating lots of nutrient-poor high-carb foods such as white flour breads, pastas, and processed packaged vegetarian meals isn't very healthy, and a major problem I see with many vegetarian recipes is that they contain ingredients that are not actually health-promoting when eaten in large amounts (like tofu -see soy cautions). The vegetarian recipes featured here are truly good for you because they are low to moderate in carbs but contain quality protein balanced with lots of veggies and healthy fat. Whether you usually eat meat or not, you should definitely give these vegetarian recipes a try.
