Strawberry Mint Smoothie


Here is a dairy-free smoothie that tastes like liquid strawberry sorbet.

I love strawberries paired with mint, and I added mango and coconut (both in shredded form and as organic coconut oil) to give it even more of a tropical flair.

Make sure you use a high quality coconut oil (I like Tropical Traditions)--remember that coconut oil is anti-bacterial, anti-viral, anti-fungal, and supports weight loss!

I suggest adding some protein to this if you are having this for breakfast- I personally always add protein to my smoothies or my blood sugar gets a little "wonky"--if you're having it as a dessert, though, you can skip the protein.

strawberry smoothie Strawberry Mint Smoothie
1 cup organic frozen strawberries
1 cup frozen mango chunks
1 small handful of mint, rinsed well
1 serving whey or raw brown rice protein powder (I like Sun Warrior Protein)--optional
1 cup or more cold water
1 Tb. organic coconut oil
1 Tb. organic unsweetened shredded coconut

Directions:

Blend all ingredients well, adding additional water if necessary to produce desired consistency. Taste your smoothie and if it is not sweet enough, you can add a little stevia, raw honey, or strawberry preserves that contain no sugar. Serves 1.
