Roasted Lemon Dill Potatoes

Thank you to Brandon for this roasted lemon dill potatoes recipe.



Ingredients:
4 medium red potatoes
2 tablespoons olive oil
1 tablespoon fresh squeezed lemon juice
1 tablespoon minced garlic
½ teaspoon dried dill weed
½ teaspoon kosher salt
Dash of pepper

Preheat oven to 375 degrees F. and chop the potatoes into 1 inch chunks. Place the potatoes into an oven safe dish with a cover. Add all of the ingredients to the dish except the dill weed and stir until the potatoes are evenly coated. Sprinkle the dill weed on top of the potatoes, cover, and roast for about 60 minutes.
