Raw Cookie RecipesThese raw cookies are will satisfy your sweet tooth in a much more wholesome way than a dessert filled with refined sugars and processed fats. Since they are made with all natural, whole food ingredients and they are not cooked at high temperatures, they are quite high in nutrients and live enzymes. The ingredients are all considered raw, so they are appropriate for a raw foods diet; if you don't need your raw cookie recipes to be 100% raw, I have given you ideas for substitutions. Even though they are healthy, these raw cookie recipes are still very sweet, though, and should not be overeaten. If you aren't in good health or if you are very sensitive to sugars, you should generally stay away from all desserts, even if they are made with raw food dessert recipes. Cashew Date Macaroons
1/2 cup raw cashews (soaked for 4 hours if possible) or 1/2 cup raw cashew butter 1 cup unsweetened organic dried shredded coconut 1 tsp. fresh lemon juice- optional 6 organic Medjool dates 2-3 Tb. yacon or agave syrup (raw honey can be used, but it is not vegan; maple syrup can be used, but it is not technically raw) Directions:Combine all ingredients in food processor or Blendtec blender. Pulse several times until ingredients are combined, but not too runny. Remove from food processor into a bowl. Using your hands, make small balls. Refrigerate or freeze 30 minutes for desired consistency, or place in a dehydrator and dehydrate at 115°F. for 6-12 hours or more, if necessary. Makes 6-8 small macaroons.Preparation suggestions:You can use more dates and omit the extra sweetener, and you can roll these in additional shredded coconut.Raw Banana-Almond Cookies 1 ripe banana, preferably organic and fair-trade 1/2 cup raw almonds (soaked for 4 hours if possible) or 1/2 cup raw almond butter 1/2 cup unsweetened organic dried shredded coconut Pinch of Himalayan or sea salt 2 Tb. coconut oil or coconut butter 1/2 cup raw cocoa nibs or 1/2 bar chopped organic raw chocolate (or use 1/2 bar non-raw 70% or higher organic dark chocolate, chopped) Directions:If using almonds, chop or blend them in a Blendtec blender until fine. Add other ingredients and blend thoroughly. If using nut butter, you can just mix everything in a bowl with very clean hands. Once mixed into a ball, place into freezer for 20 minutes to make the "dough" easier to work with. Remove from freezer and form into approximately 8 small balls. Chill until firm and eat "frozen", or dehydrate at 115°F for 6-12 hours or until desired texture is reached.Raw Pear or Apple Raisin Coconut Cookies 1 green apple or pear, peeled and chopped 1/3 cup raisins 2/3 cup unsweetened organic dried shredded coconut 1/3 cup raw almond butter Directions:Combine all ingredients in a food processor or Blendtec blender. Pulse several times until ingredients are combined. Place "dough" into a ball. Using your hands, make 8-10 small balls and roll in additional shredded coconut. Refrigerate or freeze 30 minutes for desired consistency.You can easily come up with your own raw cookie recipes, too--feel free to experiment with different combinations of fresh or dried fruits, raw nut/seeds or nut/seed butters, organic unsweetened coconut, coconut flour, coconut oil, organic raw cacao, and natural sweeteners! |
