Oat Cherry Scones


These oat cherry scones are low in fat and high in fiber- I'm calling them scones but they are really more of a healthy breafast cookie.

You can make "oat flour" by whirling organic rolled oats in a blender for a minute or so. Feel free to use any other dried fruit instead of the dried cherries (I personally love the cherries, though). You could also add some chopped dark chocolate (this was my original intention, but my kids asked me not to...go figure...)

These can also be made into small cookies if you prefer. Whatever shape you choose, they are nice as a light dessert, snack, or breakfast (consider skipping the chocolate if making them for breakfast!)
Oatmeal Cherry Scones
1/2 cup organic brown sugar
2 eggs, preferably organic and free-range
1/4 cup coconut oil, melted (or use melted organic butter)
2 cups organic oats, whirled in a blender so it has the consistency of flour
1/2 cup dried cherries
1/2 tsp. aluminum-free baking powder
1/2 tsp. Himalayan or sea salt
1/2 cup organic oats
1/4-1/2 cup dark chocolate chips (or bulk dark chocolate cut into small chunks) optional

Directions:

Preheat oven to 350°F. In a large bowl, mix brown sugar, eggs, and coconut oil. Add oat flour, dried cherries, baking powder, and salt. Mix well. Fold in the optional chocolate chips. Add oats and mix until combined into a "dough ball".

Spread dough into a (lightly buttered or coconut oiled) round pan (9 inch diameter) and cut into 8 wedges. Bake for approximately 25 minutes until golden.
