Napa Cabbage Salad


This salad explodes with a number of delicious flavors. It's a bit like a healthy coleslaw, and it's really easy to vary based on what you have on hand.

Cabbage Nutrition
Cabbage is not a glamorous veggie, but it is very nutrient dense. Cabbage contains lots of beta-carotene, B-vitamins, vitamin C, and vitamin K. It is also high in natural compounds that are protective against cancer.

Cabbage is also quite versatile in recipes. You can cook it of course, but I really like it shredded in healthy salads like this one; I also like it in this sauerkraut recipe.

A food processor makes preparation of healthy salad recipes like this a breeze. I resisted getting one for a while but now I am so glad I did.

Napa Cabbage Salad with Cilantro, Ginger, and Figs
4 cups shredded organic Napa cabbage
2 cups organic cilantro, chopped
2 Tb. minced fresh ginger
4 dried figs, chopped
1/2 cup chopped raw almonds or pumpkin seeds
2 Tb. organic mayonnaise, preferably made with olive oil
1 Tb. olive oil
1 Tb. raw apple cider vinegar
Himalayan or sea salt to taste

Directions:

Mix all ingredients in a large bowl. Serves 2-4.

Preparation and serving suggestions:

You can use any kind of cabbage or dark leafy greens in this salad and you could substitute raisins for the figs, add additional chopped veggies such as carrots or celery, and leave out the mayo (add additional oil and vinegar instead).
