Healthy Meat and Poultry Recipes


Meat and poultry are good sources of protein and additional nutrients and they are healthy provided you purchase organic and grass-fed varieties. Try these delicious recipes.

Chicken or Turkey Sausage with Sweet Potatoes and Greens
Sausage does not usually fall into the category of healthy meat and poultry because it contains nitrites/nitrates that may cause cancer, so make sure to find a brand free of these preservatives.

1 Tb. olive oil
4 Organic Chicken or Turkey Sausages (approx. 1 package), cut into bite-size pieces
1-2 cooked sweet potatoes
1-2 large bunches of dark, leafy greens such as kale, collard greens, mustard greens, or bok choy, chopped
Himalayan or sea salt and black pepper

Directions:
Heat oil in a cast-iron skillet or wok. Add sausages and cook over medium heatfor several minutes or until done. Add cooked sweet potatoes and greens, stir to mix well, and cook several more minutes until everything is heated through. Season with salt and pepper to taste. Serves 2-4.

Serving suggestions: This is delicious on it's own over salad greens topped with salsa and organic sour cream, or it can be used as a burrito filling.

Beef in Lettuce Cups
2 heads Boston or other large-leaf lettuce to form the "cups"
2 Tb. sesame or coconut oil
1 onion, diced
2 tsp. garlic, minced
1 Tb. fresh ginger, minced
1-4 jalapeno or Serrano chilies, minced with seeds (depending on if you want it to be spicy!)
1 cup shredded Napa cabbage
1 cup shredded carrots
2 pounds organic grass-fed ground beef (remember that organic and grass-fed are the only truly healthy meat and poultry)
2 Tb. nama shoyu, Bragg’s liquid aminos or wheat-free tamari
1-2 cups fresh chopped cilantro, mint or basil (or a combination)
Toasted sesame seeds for garnish-optional

Directions:
Separate lettuce leaves. Rinse, pat dry, and set aside. Heat coconut oil in a wok over medium heat. Add the onion, garlic, ginger, and chilies and stir-fry for 5 minutes. Add the cabbage and carrots and cook for 2 minutes. Add the meat, the shoyu, Bragg's or tamari, and stir over medium heat, breaking up the meat. Turn the heat down and simmer, for as long as 30-40 minutes, until the meat is cooked. Stir in the fresh herbs. Serve in lettuce cups, sprinkled with toasted sesame seeds, if desired. Serves 4-8.

Preparation and serving suggestions: 1-3 tsp. of curry powder can be added with the meat, if desired. Use steamed collard greens instead of lettuce for the cups and make them more like "wraps". Substitute any other green for the cabbage.
