Mango Coconut Smoothie


This is a nice dairy-free sweet and creamy smoothie. Coconut qualifies as a healthy fat, and smoothies are a simple and delicious way to incorporate coconut milk and coconut oil into your diet. I think mangos are a heavenly treat- such a sweet way to get fiber and vitamins!

Of course you can substitute other fruits for the blueberries, as well as any other greens that you have around. I do find, though, that spinach and bok choy are great choices if you are new to green smoothies, because they are very mild and not bitter.

Remember that in a sweet smoothie, you will barely taste the greens at all, yet you'll get all their amazing body benefits.

Mango Coconut Smoothie
1/2 cup coconut milk
1 1/2 cups fresh or frozen blueberries
1-2 small handfuls of spinach or 1 small head of baby bok choy
1 large mango, diced (or use approximately 1 1/2 cups frozen mango chunks)

Directions:

Blend all ingredients, preferably in a Vita-mix or Blendtec blender, adding ice or additional water to produce desired consistency. Serves 1.
