Healthy Grilled Cheese


The average grilled cheese sandwich isn't very good for you so I've been making my own version of healthy grilled cheese sandwiches lately.

I use Food for Life "Ezekiel bread", made from sprouted whole grains, and in addition to high quality raw cheese, I fill my sandwiches with lots of veggies. Cooked in a little organic butter or without added fat on a panini press, this is healthy comfort food at it's best as it makes you feel good as well as being good for you! A slice or two of organic turkey or ham can be added if you would like more protein and you're not vegetarian.

I like these made with goat cheese, but you could use any raw or organic cheese that you have on hand.

2 slices sprouted grain "Ezekial" bread
1-2 slices of organic raw cheese- try goat, cheddar, or any other cheese you love
2 tomato slices
1 thick slice of avocado--optional
handful of baby spinach or other greens--optional
handful of pea sprouts or other sprouts--optional
2 tsp. organic butter

Directions:

Assemble your sandwich by layering your cheese and your veggies between your bread slices. Melt 1 tsp. of organic butter (or you can use olive oil) in a skillet. Cook your sandwich one side until bread begins to brown and cheese starts to melt. Add the other tsp. of butter and flip the sandwich over carefully (so the insides don't fall out"). Allow the other side to brown. You can turn off the heat, place another pan or a teakettle on top of your sandwich, and allow it to rest a bit- this will help it achieve the nice pressed, thoroughy melted, and yummy quality...A panini press can also be used- these make delicious grilled sandwiches without any added fat, so they are really nice to have.

Serve with a healthy soup or salad, or once in a while, with some organic french fries.
