Healthy Crockpot Recipes


Healthy crockpot recipes can be a lifesaver when you want to put a wholesome meal on the table at the end of a long day. Healthy crockpot recipes require little work to put together and it's so nice to only have one pot to clean!



I have personally had the same crockpot for about 15 years. My only complaint is that mine is a bit small- I recommend the 5-6 quart size, and I will be upgrading to one of these myself someday soon.

Crockpot Brisket (Pot Roast)
3-4 pounds grass-fed beef brisket
2 onions, sliced
4 cloves garlic, minced
2 carrots, chopped
5 small red potatoes, halved
1/2 cup red wine (optional)
1 cup organic, low-sugar barbeque sauce
1/2 cup natural beef stock or homemade turkey stock or water
2 Tb. organic brown sugar
1 Tb. thyme leaves (optional)
several sprig of fresh rosemary (optional)
Himalayan or sea salt and pepper to taste

Directions:
Place onions in bottom of crockpot, then place brisket, fat side up, on top of onions. Sprinkle garlic on top. Add carrots, potatoes, liquid, herbs, sugar, salt and pepper and cover. Cook on low for 8-10 hours. To serve, slice the brisket against the grain and pour crockpot juices over the slices. Makes at least 8 servings. Serve with a healthy salad for a complete meal.

Chicken Black Bean Soup
2 pounds skinless, boneless free-range chicken thighs, cut into 1 inch pieces
7 cups store-bought or homemade chicken stock
10 oz. can diced tomatoes
15 oz. can black beans, with liquid
1 cup organic frozen corn (optional)
2 red peppers, chopped
1 jalapeno pepper, seeded and minced
2 cloves garlic, minced
1 tsp. ground cumin
2 Tb. fresh cilantro, minced
1 Tb. lime juice or apple cider vinegar

Directions:
Combine all ingredients except cilantro and lime juice in crockpot. Cover and cook on low for 6-7 hours. Stir in cilantro and lime juice before serving, and top with some organic sour cream or creme fraiche, if desired.

Simple Crockpot Chicken and Sweet Potatoes
Chicken is unbelievably tender when cooked this way.

1 whole chicken, preferably organic and free-range (about 4 pounds)2 cups water or chicken stock
3 sweet potatoes, scrubbed to remove any dirt
Himalayan or sea salt and pepper to taste

Directions:
Rinse the chicken inside and out. Sprinkle with salt and pepper inside and outside of the chicken. Place sweet potatoes in a 5-6 quart crockpot and place chicken on top. Turn crockpot on low and cook for 6-8 hours. Test chicken by checking that juices run clear when a toothpick is inserted into thickest portion. Remove chicken from crockpot. Pour out broth to use in other soups or to drink as a healthy beverage, and eat chicken as is or store for use in meals over the next few days. Remove sweet potatoes and allow to cool before eating, and reserve bones in the freezer to make chicken stock.
