Ginger Cranberry Sauce




I love the crystallized ginger in this ginger pear cranberry sauce; it gives the sauce a bit of a spicy kick, and it's just sweet enough with the additional of the pear and the honey. You can use apple instead of pear, if you like, and feel free to experiment with different sweeteners, such as maple syrup or agave.

Ginger Cranberry Sauce
Makes about 3 cups (enough to feed approximately 8 people)

Ingredients:

One 12 oz. package of cranberries, preferably organic cranberries
1/4 cup crystalized ginger, chopped
1/2 cup honey
1 bosc pear, chopped
tiny pinch of Himalayan or sea salt

Directions:

In a sauté pan, heat cranberries and honey over medium heat. Cook for 8-10 minutes, stirring occasionally, so that cranberries "pop" and cook down. Add crystallized ginger and chopped pear and cook over low heat for an additional 5 minutes. Taste and adjust seasonings before serving.
