Devilled Eggs


These are one of my favorite healthy snacks, and they are also one of my favorite party recipes..

Use organic free-range eggs, but keep in mind that eggs that are slightly older will be easier to peel.

To make perfect hard-boiled eggs, place the eggs in a pot and cover with cold water. Set a timer for 15 minutes. Turn on the heat and bring to a rolling boil. Reduce heat slightly and continue to cook until the 15 minutes are up. Remove the pot from the heat carefully drain the water. Allow the eggs to cool before peeling them.

Look for mayo that is not made with soy or other unhealthy oils. Grapeseed oil Vegenaise is a good choice, as is mayonnaise made with olive oil (Delouis Fils is one brand I know, but it's a bit hard to find; you could also use homemade mayo- it's yummy and not too hard to make).

Devilled Eggs

8 hard-boiled eggs, peeled and cut in half
1/3 cup grapeseed oil Vegenaise or mayonnaise made with olive oil
1 Tb. finely chopped red pepper
2 Tb. green onion, minced
1/4 tsp. Himalayan salt
1 tsp. curry powder--optional
Paprika to sprinkle for garnish-- optional

Directions

Scoop eggs yolks from the hard boiled eggs and place them in a medium-sized bowl. Add mayo, red pepper, green onion, salt, and curry powder, if using. Mash well, then return a scoopful of the mixture to each egg half. Sprinkle with paprika, if desired. Serve immediately, or refrigerate until ready to serve.
