Chicken Soup Recipe


Homemade chicken soup is legendary as Jewish penicillin, but don't wait until you are sick to make this chicken soup recipe. This is a favorite of adults and children alike- kiddies will probably want you to add noodles, and this can be easily accomplished with any kind you choose (organic wheat or spelt spaghetti, penne, rotini, or brown rice, quinoa or other noodles can all be used) after the soup is done. The kale makes the soup even healthier and more delicious in my opinion, but kids might disagree, so you can spoon out their serving before adding those nutritious greens if need be...

If you are not feeling well, you should add a bunch of garlic and ginger to the recipe: you'll end up with a super soup with lots of anti-bacterial and anti-viral properties. Sprinkling your serving with a bit of cayenne powder will give your immune system a kick in the right direction, as well.

The Best Homemade Chicken Soup Recipe

Ingredients:

1 whole chicken, approx. 3-4 pounds, preferably organic and free-range
1 Tb. butter
1 Tb. olive oil
1 onion, chopped
3 carrots, chopped
3 stalks celery, chopped
2 parsnips, chopped
4-8 cups kale, cleaned and shredded
Himalayan or sea salt and pepper to taste

Directions:

Heat olive oil and butter in a large soup pot. Place chicken in the pot and allow to sear on each sides. Add a little water if necessary to prevent burning. Add chopped onion and cook for several minutes, moving the chicken, again adding a little water to prevent burning.

Add the rest of the vegetables, and then add enough water to cover the chicken. Bring to a boil, skim any foam that rises to the top, then reduce heat to a simmer. Cook for 50 minutes-1 hour.

Turn off heat and add the kale. Let cool, taste the broth, then season with salt and pepper. When chicken is cool enough, remove it from the pot. Remove meat from chicken bones and store in the refrigerator to add back into servings of soup and for other recipes like sesame chicken salad. Store picked over chicken bones in the freezer for making stock.

Serving suggestions:

Mix some miso or coconut milk into a serving of soup for a health-enhancing treat. You could also add some raw cream or creme fraiche before serving. Kimchee also makes a great addition mixed in to this soup.
