Cherry Ginger Smoothie


I wouldn't have thought of making a cherry ginger smoothie until I sampled a similar one (it was cherry vanilla, I believe) at a great local vegetarian restaurant called Karma Road.

In my version, I add mineral-rich greens, raw cocoa (hello magnesium!) and coconut oil (a fat-burning fat- yes!) to make it super nutritious (you can omit these if you want, but I promise you'll be missing out), as well as ginger to give it some zing.

This smoothie features frozen cherries because they are so easy to deal with (1. open bag 2. dump out cherries) but of course you could use pitted fresh cherries if you like. You can also substitute any other greens for the baby bok choy, but do give it a try if you can find some- it's so mild you won't even know it's there.



Cherry Ginger Green Smoothie
1/2-1 banana, peeled and sliced (hint: keep peeled and sliced bananas in bags in the freezer at all times)
1-2 cups frozen cherries
1 head baby bok choy, bottom trimmed off, cleaned and coursely chopped
One 1-inch slice of fresh ginger (or more to taste)
1 cup water
1 Tb. organic coconut oil
1 Tb. raw cocoa

Blend all ingredients well, adding ice or additional water to produce desired consistency. Serves 1-2.
