Blackberry Noodles

This blackberry noodles recipes sounds really interesting and really good...it's a bit like a Jewish noodle kugel, a sweet noodle dish that I love. The homemade noodles seem very easy to make- I'm going to try them with spelt flour.

1 cup blackberries (fresh, canned, or frozen)
1/2 cup apple, pear, cranberry, or grape juice
1 tablespoon lemon juice
1/3 batch noodles (see below)

In a heavy-bottomed saucepan, bring berries and juices to a boil. Add noodles and simmer, stirring constantly, until noodles are done (2-5 minutes for fresh noodles).

Serve hot or cold.

Noodles:
1 egg
1/4 tsp salt (optional)
Flour (amount will vary, try mixing whole wheat and barley flours, yum!)

Scramble egg with salt. Mix in flour, a spoonful at a time, until it forms a stiff dough. Knead, roll out, and cut into noodles. For this recipe small, thick noodles are better, as long ones tend to get messy.
