Bitter Greens Salad


I love this green salad recipe. Radicchio is so good for you- so high in minerals including calcium, magnesium and iron, wonderful for the bones, hair, and skin... I could go on and on. Many people don't enjoy their strong flavor but here it is masked somewhat by the other delicious additions to this radicchio recipe. Also, if you consider that the bitter taste stimulates better digestive function, I think it makes the salad more enjoyable.

Bitter Greens Salad with Walnuts and Blue Cheese

Ingredients:

2 heads of romaine lettuce, chopped
2 heads of red leaf lettuce, chopped
1 bunch of radicchio, arugula, watercress, or dandelion greens, chopped
8 radishes, sliced
4 scallions, chopped
1 cup dried cranberries or dried cherries
1 cup walnuts, toasted in a dry skillet for 1-2 minutes, and then chopped (be careful not to burn)
4 oz. raw blue cheese
4-6 Tb. olive oil
2-3 Tb. organic balsamic vinegar
Himalayan or sea salt to taste

Directions:

Mix all ingredients in a large bowl. Serves 4-8.

Preparation and serving suggestions:

You can use any kind of greens in this salad and you could substitute figs for the other dried fruit, add additional chopped veggies such as cucumber, avocado, and cooked beets, and add some turkey or chicken if you eat meat, for a complete meal.
