Apple Raisin Muesli

This is a fairly classic muesli recipe, but it's endlessly variable.

You could use applesauce instead of fresh apples (or use any other fresh or dried fruit you have on hand) , and cashews also go nicely here (if you are able to soak your nuts/seeds it is better for digestion.

You could add a little unsweetened organic shredded coconut before serving, too.

If you avoid gluten, look for gluten free oats, or try it with soaked raw buckwheat groats.

Apple Raisin Muesli

1 cup oats, soaked overnight and drained (or soaked raw buckwheat hulls for gluten-free option)
1 banana, sliced
1 apple, grated or chopped
1/4 cup raisins
1/4 cup sunflower seeds
1 orange, juiced-optional
1-2 Tb. liquified coconut oil -optional
1/2 cup organic yogurt or raw milk- optional

Directions:

Mix all ingredients together. If desired, you may pulse this in a Vita-mix or other high speed blender a few times (if you want to add the coconut oil you can do this when the mix is in the blender). Serves 2-3.
