Thanksgiving Menu Ideas


Thanksgiving is the perfect time to offer your family incredibly delicious, yet healthful, food. Try some of these healthy Thanksgiving menu ideas and you are sure to have one of the most memorable meals ever.

While you are finishing with the cooking, make sure to put out something for hungry folks to snack on- I like to serve a plate of vegetables crudites with an offering of healthy dips, a selection of local raw cheeses and whole grain crackers, and a variety of olives.

This menu will provide enough food to feel at least 6-8 people, with plenty of leftovers. If you think you will need more food, you can always make a healthy soup such as creamy carrot soup or another healthy salad.

Though they are not the absolute healthiest, I also usually make mashed potatoes because everyone in my family loves them. Here is the recipe I use.

Roasted Garlic Mashed Potatoes
4 pounds local white potatoes, preferably organic, peeled and chopped
Cloves from 2 heads garlic, previously roasted
½ cup (1 stick) organic butter
1/2 -1 cup raw or homogenized but not ultrapasteurized heavy cream (or to taste)
Himalayan or sea salt to taste

Directions:
Place potatoes and garlic in a large pot. Add water to cover. Bring water to a boil and cook for 15-20 minutes or until potatoes are very tender. Remove from heat and pour off almost all of the water. Using a potato masher, mash the potatoes. Add the butter and mix well. Add the cream to taste and mix again. Taste and season with salt.
