African Peanut Soup


I always use organic peanut butter when I make this soup (see healthiest peanuts for more information about the healthiest peanuts and peanut butter).

As with all of my recipes, try to use as many local organic veggies as you can.

African Peanut Soup Recipe
Serves 6-8

Ingredients:

2 Tb. coconut oil
2 med. onions, chopped
2 red peppers, chopped
3 garlic cloves, minced
28 oz. can of tomatoes, with juice, chopped
8 cups homemade chicken stock or water
½ tsp. crushed red pepper flakes
½ tsp. black pepper
½ cup uncooked brown rice
2/3 cup organic peanut butter (smooth or chunky)
2-4 Tb. unsalted organic peanuts, chopped, for garnish-optional
2-4 Tb. cilantro, chopped, for garnish-optional

Directions:

Heat coconut oil in a large soup pot. Add onions, peppers, and garlic and cook until fragrant and soft, about 5 minutes. Add tomatoes and juice, broth, pepper flakes, and pepper. Simmer about 15 minutes, uncovered, over low heat. Add rice, cover, and cook over low heat for about 30 minutes. Check to see that rice is cooked, and remove from heat. Whisk in the peanut butter. Serve garnished with chopped peanuts and cilantro, if desired. Serves 4-6.
